🌼 About the Recipe

Diwali means lights, joy, and delicious sweets! ✨
This year, I created something unique β€” a two-color crispy sweet using maida (flour) in two ways: one with plain water and the other with beetroot juice.
The result? A vibrant, flaky, and crunchy sweet that’s layered with ghee and coated in sugar syrup.
It’s simple, eye-catching, and perfect for your festive platter! πŸ’—

🧁 Ingredients

For the dough:

  • 1 cup maida (all-purpose flour)
  • 1 tbsp ghee
  • A pinch of salt
  • Water (as needed for one dough)
  • Beetroot juice (as needed for the second dough)

For layering & frying:

  • Ghee (as needed)

For sugar syrup:

  • 1 cup sugar
  • Β½ cup water
  • Β½ tsp cardamom powder (optional)

πŸ‘©β€πŸ³ Step-by-Step Instructions

  1. Prepare the dough:
In a bowl, mix maida, ghee, and salt. Divide into two parts.
    • Knead one dough using water.
    • Knead the other using beetroot juice for a natural pink color.
  2. Rest:
Cover both doughs and let them rest for 30 minutes.
  3. Roll & layer:
Roll out 6 small chapatis (3 from each dough).
Brush each chapati with ghee and stack them alternately β€” one plain, one pink, and so on.
  4. Cut & shape:
Roll the stacked layers slightly, then cut into desired shapes or strips.
  5. Fry:
Heat ghee on medium flame and fry until crisp and golden brown.
  6. Make the syrup:
Boil sugar and water together until slightly sticky (1-string consistency). Add cardamom powder for flavor.
  7. Coat the sweets:
Dip each fried piece into the syrup for 30 seconds, then remove and let it set beautifully.

πŸ’« Pro Tips

  • Resting the dough makes the layers flaky and crisp.
  • Use beetroot juice for natural color β€” no artificial dyes needed!
  • Decorate with silver vark or pistachio flakes for a festive look.
  • Store in an airtight jar once cooled; stays crunchy for 3–4 days.
